  1. Another tip is instead of purple onions, we use kitunguu maji(green onions that have white bottoms) in the meat and we almost never add green peas to minced meat (if you want an authentic beef Kenyan samosa).

  2. Another tip for y'all, I don't know about you but the flours used here are pretty hard to come by in my part of Kenya,so the cheapest when making bhajia is to substitute all these flours for just gram flour. They make the bhajias crunchier.

  3. What the hell is leavener?? Here we use unga ya exe ya yellow ama all purpose flour. Those leavener you find in international hotels my friend. FYI, mandazi is VERY EASY to come by, you just looked in the wrong place. Don't expect to find vibanda za mandazi in westi, visit eastlands and find mandazi and chapati at every nook and cranny, better yet every where there's a road here, there's a kibanda with mandazi.
